The Ceravolo Vineyard sits high in the cool elevations of Ashton, in the heart of the Adelaide Hills — a landscape of rolling green hills, cherry orchards, chestnut groves and misty mornings, shaped by altitude, rainfall and the cooling maritime influence that moves through the Hills. Lush, temperate and Mediterranean in spirit, Ashton is where the Ceravolo philosophy naturally found its home, and where we grow Italian varietals including Cortese, Barbera and Dolcetto alongside refined cool-climate Chardonnay and Pinot Noir.

Our Home

Our vineyard is set over approximately. 3 hectares of gentle slopes east of Mt. Lofty. We are right between Ashton and Basket Range and co -exist with apple orchards, cherry trees and wonderful wildlife.

The property has evolved from humble beginnings in 1974 when Joe and Heather built "Careri" our family home.

Today the Ceravolo family lives at Ashton and love being part of everything that the Adelaide Hills has to offer.

METICULOUS

Vineyard Management

Our vineyards are all planted on rows running mainly N-S to allow as much as possible “all day” sun penetration to the fruit. Our rows are 2.8 m apart and vines are 750mm apart The cordon wire is approx. 800mm from ground level. We spur prune the Barbera and Dolcetto and we cane prune our whites. We utilise vertical shoot positioning by having 2 sets of foliage wires which are positioned at critical points in fruit and vine canopy management. We allow the native grasses to grow in the mid row to provide the best environment for beneficial bugs and minimise the need to use chemicals.

ORGANIC

Soils

Our topsoils are mainly sandy loams, moderately acidic, with some clayish loams formed by the weathering of ancient rocks, over stratified rockstrata consisting of a mixture of sandstone and quartz.

Soils in our vineyards are high in organic content and low in natural fertility and are well drained being on gentle slopes (10 to 15 degrees) to the East of Mt Lofty.
