Pinot Noir is the variety that separates serious cool-climate sites from the rest — and the Adelaide Hills is one of Australia's most credentialled. Our Ashton Pinot Noir 2025 is hand-picked from the northern block of the estate, a parcel chosen for the elevation and cool aspect this notoriously demanding grape requires.
Tasting Notes: The 2025 shows ripe cherry, strawberry and spicy plum, layered with subtle forest floor notes and an earthy complexity that lifts it beyond simple fruit. Medium-bodied, vibrant and refined, it captures the elegance and silken texture that make Pinot Noir the world's most sought-after red.
Food pairing: Pairs beautifully with duck, mushroom dishes, roast pork, salmon and soft washed-rind cheeses. Serve lightly chilled (14–16°C).
